All our Beef is 100% Irish, is sourced locally and chosen specifically for us from produce under 30 months. It is then matured for us specifically by dry aging the beef for approximately 21 days in a cold room, to ensure a firm but tender texture, giving a more unique flavour and quality to the beef.
